Ingredients
1 tablespoon olive oil
1 pound lean ground beef
1 small yellow onion, finely diced
1 red bell pepper, diced
3 cloves garlic, minced
3 tablespoons tomato paste
2 teaspoons dried oregano
1 teaspoon dried basil
1 teaspoon Italian seasoning
3/4 teaspoon salt
1/4 teaspoon pepper
6 cups low sodium chicken broth
28 ounce can crushed tomatoes
8 ounces short pasta shapes or lasagna noodles, broken into pieces
2 cups fresh spinach, chopped
Shredded mozzarella, ricotta, or grated Parmesan for garnish
Instructions
Heat olive oil in a large Dutch oven or soup pot over medium-high heat.
Add ground beef, onion, and red bell pepper to the pot and cook until browned, about 6-8 minutes, breaking up the meat with a wooden spoon.
Drain any excess grease if desired.
Stir in the minced garlic and tomato paste, cooking for another minute until fragrant.
Add the dried oregano, basil, Italian seasoning, salt, and pepper, stirring to coat the meat mixture.
Pour in the chicken broth and crushed tomatoes, bringing the mixture to a gentle boil.
Stir in the pasta and reduce heat to a simmer, cooking for 8-10 minutes or until the pasta is al dente.
Stir in the fresh spinach and cook until just wilted.
Ladle into bowls and garnish with mozzarella, ricotta, or Parmesan cheese before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. If the soup thickens too much upon reheating, add a splash of broth or water. You can substitute lean ground turkey for the beef for a lighter version.
