  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 pound gnocchi (fresh or packaged)
  • 1 tablespoon cornstarch (optional, for thickening)
  • Fresh parsley, for garnish (optional)

Instructions

1. In a large pot or skillet, heat the olive oil over medium heat.

2. Add the diced chicken and cook until browned on all sides, approximately 5–7 minutes. Remove the chicken and set aside.

3. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 4–5 minutes until the vegetables are tender.

4. Stir in the thyme, parsley, salt, and pepper, mixing well.

5. Pour in the chicken broth and heavy cream, stirring to combine.

6. Bring the mixture to a low boil and add the gnocchi. Reduce heat to a simmer and cook for 3–5 minutes until the gnocchi floats to the top.

7. If a thicker sauce is desired, mix the cornstarch with a little water to create a slurry, then stir it in and simmer for an additional 2–3 minutes until thickened.

8. Return the cooked chicken to the pot and stir well to combine.

9. Remove from heat and serve immediately, garnished with fresh parsley if desired.

Notes

This recipe works with fresh or packaged gnocchi — no need to boil separately.

To make it dairy-free, substitute coconut cream or a plant-based alternative for the heavy cream.

Add mushrooms or spinach for extra vegetables.

Leftovers keep well in the fridge for up to 3 days. Reheat gently on the stove with a splash of broth or cream if it thickens.
