Description

This comforting One Pot Creamy Chicken Stew is a classic American staple that brings warmth and flavor to any table. Tender chicken thighs are seared to perfection and simmered with golden potatoes, carrots, and celery in a velvety, herb-infused broth. Designed for busy home cooks, this hearty meal is built in a single pot to make cleanup simple and stress-free. It is a wholesome, filling, and deeply satisfying dish that is perfect for feeding a family on a chilly evening.

Ingredients

Scale

2 tablespoons vegetable oil
2 pounds boneless skinless chicken thighs, cut into large bite-sized pieces
5 tablespoons all-purpose flour, divided
1 large onion, chopped
4 cloves garlic, minced
3 ribs celery, chopped
2 carrots, chopped
1.5 pounds small gold potatoes, halved
5 cups chicken broth
0.5 teaspoon dried thyme
1 teaspoon salt
0.5 teaspoon black pepper
0.5 cup heavy cream

Instructions

Toss the chicken pieces with 3 tablespoons of flour in a bowl until evenly coated.
Heat oil in a large pot over medium-high heat and sear the chicken until golden brown, then remove and set aside.
In the same pot, add onions, celery, and carrots, sautéing until softened.
Add the minced garlic and cook for another minute until fragrant.
Stir in the remaining 2 tablespoons of flour and cook for 1 minute to remove the raw flour taste.
Pour in the chicken broth, scraping the bottom of the pot to release any browned bits.
Return the chicken to the pot and add the gold potatoes, thyme, salt, and pepper.
Bring to a boil, then reduce heat to low and simmer for 25-30 minutes until the potatoes are tender and the stew has thickened.
Stir in the heavy cream and cook for an additional 2-3 minutes before serving.

Notes

You can add extra hardy vegetables like parsnips or peas to the mix if desired. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop.
