Oat Peanut Butter Date Balls are a quick, no-bake snack or dessert. These vegan, gluten-free energy bites are packed with fiber and made with wholesome ingredients like oatmeal, dates, and natural peanut butter, plus a delightful crunch from dairy-free chocolate chips.
Ingredients
- 1 cup dates (~12–13 dates, pitted)
- ½ cup rolled oats
- ¼ cup creamy peanut butter (unsalted)
- 2 tablespoons dark chocolate chips or chopped chocolate/cacao nibs
Instructions
1. Blend dates into a sticky paste. If the dates are dry, soak them in hot water for 10 minutes, then drain before using.
2. Add oats and peanut butter to the food processor and blend until a thick dough forms.
3. Mix in chocolate chips until evenly distributed.
4. Scoop and roll the mixture into balls. If sticky, wet your hands slightly. Makes about 12 balls.
5. Enjoy immediately or refrigerate for later.
Notes
Keep stored in an airtight container—up to 5 days in the fridge or 3 months in the freezer.
Soft dates blend better. Soak dry ones in warm water before use.
If the mixture is too sticky, add more oats one tablespoon at a time. If too dry, mix in a splash of water or more peanut butter.
Use creamy, natural peanut butter for best texture.
