Description

These No-Bake Pecan Pie Balls are a quick and easy dessert made with just 4 wholesome ingredients. Perfect for pecan lovers, these naturally sweet bites are ready in 10 minutes and packed with rich, nutty flavor.

Ingredients

Scale
  • 1 cup packed, soft pitted dates (240 g)
  • 1 cup raw pecans (140 g)
  • 1/2 tsp sea salt
  • 1/2 tsp pure vanilla extract

Instructions

1. Place all ingredients in a food processor. Blend until it forms a thick, sticky dough that you can press together between your fingers.

2. If the dough isn’t sticking together, add 1 tsp warm water and process again. Repeat as needed until rollable.

3. Using your hands, roll the dough into 12 bite-sized balls.

Notes

It’s important to use soft, moist dates for the best texture. If your dates are dry, soak them in hot water for 15 minutes, then drain well before using.

Store in a sealed container in the fridge for up to 2 weeks or freeze for up to 3 months.

These make a perfect holiday dessert or everyday energy bite.
