Description

Million Dollar Chicken Casserole is the ultimate comfort food — tender shredded chicken baked in a creamy blend of cheeses and topped with buttery crushed crackers and melted mozzarella for a rich, crispy finish.

Ingredients

Scale
  • 1 (10.5 oz) can of cream of chicken soup
  • ½ cup cottage cheese
  • ½ cup sour cream
  • 4 oz cream cheese, softened to room temperature
  • 1 ½ tsp Creole seasoning
  • ½ tsp onion powder
  • 1 tsp garlic powder, divided
  • 5 cups shredded rotisserie chicken
  • 1 tbsp freshly chopped parsley
  • 30 buttery round crackers (like Ritz), crushed
  • 4 tbsp melted unsalted butter
  • 1 cup shredded mozzarella cheese
  • 1 tsp sliced scallions (or to taste)

Instructions

1. Preheat your oven to 350°F (175°C).

2. In a medium bowl, mix together the cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole seasoning, onion powder, and ½ teaspoon of the garlic powder until smooth and well combined.

3. Gently fold in the shredded chicken and chopped parsley, ensuring the chicken is evenly coated with the creamy mixture.

4. In a separate bowl, combine the crushed crackers, melted butter, and remaining ½ teaspoon of garlic powder. Stir until the crackers are fully coated.

5. Evenly spoon the chicken mixture into an 11×7-inch or 9-inch square baking dish.

6. Sprinkle mozzarella cheese evenly over the top, followed by the cracker mixture.

7. Place the baking dish on a foil-lined baking sheet to catch any drips and bake in the preheated oven for about 35 minutes, or until the cracker topping is golden brown and the edges of the casserole are bubbly.

8. If desired, garnish with sliced scallions before serving.

Notes

To make this Million Dollar Chicken Casserole gluten-free, substitute the buttery round crackers with a gluten-free version.

Ensure the cream of chicken soup used is also gluten-free, as some store-bought options may contain gluten.

These easy swaps make the dish suitable for those with dietary restrictions, while still preserving the rich, comforting flavors.
