Description
A delicious and hearty Mediterranean-inspired vegetable beef soup made with savory broth, tender vegetables, and beef. Perfect for chilly days and cozy nights.
Ingredients
- 1 lb ground beef (or beef stew meat, cubed)
- 1 medium yellow onion, chopped
- 2–3 garlic cloves, minced
- 2 cups diced potatoes
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup green beans, chopped
- 1 cup carrots, sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
Instructions
1. In a large pot, brown the ground beef or cubed beef over medium heat. Drain excess fat if needed.
2. Add chopped onion and minced garlic. Cook until the onion becomes translucent.
3. Stir in diced potatoes, beef broth, diced tomatoes, green beans, and carrots.
4. Add oregano, basil, salt, and pepper to the pot. Stir well.
5. Bring mixture to a boil, then reduce heat and let simmer for 30–40 minutes, or until vegetables are tender.
6. Taste and adjust seasoning as needed. Serve hot.
Notes
Serve with fresh herbs and crusty bread for a complete meal. This soup stores well in the refrigerator for up to 3 days or can be frozen for up to 3 months.
