Ingredients
1.5 cups dry quinoa
2.25 cups water
0.66 teaspoons salt
2 medium chicken breasts, diced
0.5 fresh lemon, juiced
1 tablespoon olive oil
0.5 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon salt
0.5 teaspoon black pepper
1 tablespoon honey
1.5 tablespoons olive oil for frying
1 cup diced cucumber
1 cup halved cherry tomatoes
1 cup diced bell pepper
Instructions
Rinse the quinoa thoroughly under cold water.
Combine quinoa, water, and salt in a pot, bring to a boil, then simmer covered for 15 minutes.
Whisk together lemon juice, 1 tbsp olive oil, paprika, oregano, garlic powder, salt, pepper, and honey in a bowl.
Toss the diced chicken in the marinade and let sit for 10 minutes.
Heat 1.5 tbsp olive oil in a skillet over medium-high heat and fry the chicken until golden brown and cooked through.
