  • 1 lb boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 pita breads
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Fresh parsley for garnish

Instructions

1. Mix olive oil, oregano, garlic powder, salt, and pepper in a bowl to create the marinade. Add chicken thighs and marinate for at least 30 minutes.

2. Heat a skillet over medium-high heat. Cook the marinated chicken for 5–7 minutes per side until golden brown and cooked through (165°F/75°C internal temperature).

3. While the chicken cooks, prepare the tzatziki sauce by combining Greek yogurt, crumbled feta, lemon juice, minced garlic, salt, and pepper. Mix until smooth and creamy.

4. Once the chicken is done, slice it into strips.

5. To assemble the gyros, spread tzatziki sauce onto each pita bread, top with sliced chicken, cherry tomatoes, diced cucumber, and sliced red onion.

6. Roll up the pitas and garnish with fresh parsley. Serve immediately and enjoy!
