Ingredients
1 tbsp olive oil
1 lb ground chicken
1 tsp chili powder
1 tsp cumin
1 cup black beans (rinsed and drained)
1 cup romaine lettuce (finely chopped)
1/2 cup red cabbage (thinly sliced)
1/2 cup salsa
1/2 cup corn
1/4 cup cheddar cheese (grated)
1.5 cups water
1 cup white rice
1/2 cup sour cream
1/4 cup fresh cilantro
2 tsp lime juice
1/4 tsp salt
Instructions
Rinse the rice and combine with 1.5 cups of water in a pot; bring to a boil, then cover and simmer for 15-18 minutes until tender.
While rice cooks, heat olive oil in a skillet over medium heat and brown the ground chicken.
Add the chili powder and cumin to the chicken, stirring to coat evenly; cook until browned through.
In a small bowl, whisk together sour cream, fresh cilantro, lime juice, and salt for the crema.
Divide the cooked rice into four meal prep containers.
Top each bowl with a portion of the seasoned chicken, black beans, corn, romaine lettuce, red cabbage, salsa, and a sprinkle of cheddar cheese.
Drizzle the cilantro-lime crema over the bowls just before serving or store it in small side containers.
Notes
