Description

This comforting and creamy Marry Me Chicken Orzo Soup brings the bold, savory flavors of the viral pasta dish into a hearty, one-pot meal. Featuring sun-dried tomatoes, tender orzo, and shredded chicken in a silky, garlic-infused broth, this soup is perfect for busy weeknights. It is a luxurious yet approachable meal that feels special enough for date night but simple enough for a family dinner, hitting the table in under forty minutes.

Ingredients

Scale

2 tablespoons olive oil
1 small white onion, finely diced
0.5 teaspoon salt
0.125 teaspoon black pepper
4 cloves garlic, minced
0.5 teaspoon Italian seasoning
1 tablespoon tomato paste
0.33 cup sun-dried tomatoes in oil, chopped
1 cup orzo pasta
2 cups shredded cooked chicken
6 cups chicken broth
3 cups fresh spinach, chopped
1 cup half and half

Instructions

Heat the olive oil in a large soup pot or Dutch oven over medium heat.
Add the diced onion, salt, and pepper, sautéing until the onion is translucent.
Stir in the minced garlic, Italian seasoning, and tomato paste, cooking for about one minute until fragrant.
Add the chopped sun-dried tomatoes and orzo pasta, stirring to coat well.
Pour in the chicken broth and bring the mixture to a gentle boil.
Reduce the heat and simmer for about 8-10 minutes, or until the orzo is tender.
Stir in the shredded chicken and chopped spinach, cooking until the spinach has wilted.
Pour in the half and half, stirring constantly until heated through.
Taste and adjust seasoning with additional salt or pepper if needed.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop, adding a splash of broth if the orzo has absorbed too much liquid.
