6 strips beef bacon, chopped
2 tablespoons unsalted butter
1 pound lean ground beef
4 ounces cream cheese, softened
2 tablespoons tomato paste
1 tablespoon yellow mustard
1 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cups high-quality beef stock
1/4 cup heavy cream
1 cup sharp cheddar cheese, shredded
Fresh chopped parsley for garnish


Instructions

Heat a large Dutch oven or soup pot over medium-high heat.
Add chopped beef bacon and cook until crispy, then remove and set aside.
