Description

Low carb BBQ chicken thighs make a delicious entree ready in about 30 minutes. Serve this diabetic-friendly BBQ bowl over sautéed peppers and onions for a satisfying meal the whole family will love!


Ingredients

  • 1 teaspoon olive oil
  • 1 medium onion, thinly sliced
  • 5 boneless, skinless chicken thighs
  • ⅓ cup lower carb BBQ sauce
  • ½ cup shredded cheese

Instructions

1. Heat oil in a medium skillet. Add onions and cook for 3–4 minutes, stirring occasionally.

2. Salt and pepper the chicken thighs, then place them in the skillet with the onions. Cover and cook on medium-low for 2–3 minutes.

3. Uncover and continue cooking until the chicken reaches an internal temperature of 165°F, about 10 minutes.

4. Using two forks, shred the cooked chicken in the pan.

5. Stir in the BBQ sauce until evenly coated.

6. Top with shredded cheese and cover for 1–2 minutes, allowing the cheese to melt.

7. Serve hot, optionally over sautéed peppers and onions for a full low-carb meal.

Notes

Slice onion thinly and sauté until browned for the best flavor.

Allow the chicken to brown slightly before shredding for deeper flavor.

Choose a low sugar or no sugar BBQ sauce to keep carb counts low.
