  • 4 pieces chicken breasts, boneless skinless — Make sure they are of even thickness for uniform cooking.
  • 1 cup bread crumbs — For added crunch, crushed crackers can be mixed in.
  • 1 cup grated Parmesan cheese — Two portions will be used throughout the recipe.
  • 1 cup shredded mozzarella cheese — Can replace with cheddar cheese for a variation.
  • 1/2 cup all-purpose flour — For dredging.
  • 2 large eggs — Beaten with milk.
  • 1/4 cup milk — Used to moisten eggs.
  • 2 cloves garlic, minced — Adds flavor to the cheese topping.
  • 1 teaspoon Italian seasoning — For seasoning the breadcrumb mixture.
  • 1/2 teaspoon salt — For seasoning.
  • 1/4 teaspoon black pepper — For seasoning.
  • 2 tablespoons olive oil — For frying the chicken.

Instructions

1. Preheat your oven to 375°F.

2. In one dish, mix the bread crumbs, half of the grated Parmesan cheese, the Italian seasoning, salt, and black pepper.

3. In another dish, beat the eggs and milk together.

4. Place the flour in a third dish.

5. Dredge each chicken breast in the flour, then dip it into the egg mixture, and finally coat it with the breadcrumb mixture.

6. Heat olive oil in a pan over medium heat and cook the chicken for 3-4 minutes on each side until golden brown.

7. Transfer the cooked chicken to a baking dish.

8. In a bowl, mix the remaining Parmesan cheese with mozzarella cheese and minced garlic, then top this mixture over the chicken breasts.

9. Bake in the oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly.

Notes

Serve hot, right out of the oven. Pairs well with pasta, salad, or steamed vegetables. For extra spice, consider adding red pepper flakes to the breadcrumb mixture. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for up to 2 months. Reheat in the oven until warmed through.
