Description
Lemon Pepper Macaroni Salad is a bright and flavorful pasta salad with fresh lemon juice, colorful vegetables, cheddar cheese, and cracked black pepper tossed in a creamy dressing.
Ingredients
- 1/2 of a 16 ounce box rotini pasta, cooked according to package directions
- 15 black olives, sliced thin
- 1/2 cup red onion, diced
- 2 Tablespoons red bell pepper, diced
- 2 Tablespoons yellow bell pepper, diced
- 2 Tablespoons green bell pepper, diced
- 10 cherry tomatoes, cut in half
- 1/2 cup cheddar cheese, cubed small
- 3/4 cup mayonnaise
- 1 Tablespoon lemon juice
- Fresh ground pepper to taste
Instructions
1. Place the cooked pasta, diced peppers, onion, cherry tomatoes, black olives, and cubed cheese in a large bowl. Toss to combine.
2. Place the mayonnaise and lemon juice in a medium bowl and whisk to combine.
3. Grind fresh pepper into the mayonnaise mixture to taste and whisk again to incorporate.
4. Pour the dressing over the pasta mixture and toss until evenly coated.
5. Chill until ready to serve. Keep in mind the pepper flavor will mellow slightly once mixed with the pasta.
Notes
For best flavor, chill the salad for at least 1 hour before serving.
Use freshly ground black pepper for the boldest flavor.
You can substitute macaroni or bowtie pasta for the rotini if desired.
