A vibrant, hearty Italian salad combining tender cheese tortellini, halal turkey summer sausage, fresh vegetables, and a zesty lemon vinaigrette. Perfect for summer feasts or a quick family meal.
Ingredients
20 ounces fully cooked cheese tortellini
8 ounces diced halal turkey summer sausage (pork-free)
1 cup halal fresh mozzarella pearls
1 cup cherry tomatoes, halved
1/2 cup seeded and diced cucumber
1/2 cup diced red bell pepper
1/4 cup pitted kalamata olives
1/4 cup pignut halves
1/4 cup fresh basil, chopped
8 ounces English cucumber (diced, if using)
1/4 cup red onion, finely chopped
Vinaigrette: 1/4 cup olive oil, 2 tbsp fresh lemon juice, 1 tsp dried oregano, 1 tsp dried basil, salt/pepper to taste
Instructions
Cook tortellini according to package directions (tortellini is typically precooked, so simply heat through)
Drain and rinse with cold water to cool
In a large bowl, combine cooled tortellini, turkey sausage, mozzarella pearls, cherry tomatoes, cucumber, red bell pepper, olives, pignut halves, basil, and red onion
In a small bowl, whisk vinaigrette ingredients
Pour dressing over salad and toss gently to coat
Refrigerate for 30 minutes before serving (optional for enhanced flavor)
Notes
Use halal-approved ingredients if required; verify sausage and mozzarella are non-pork.
Add seasonal veggies like zucchini or snap peas for variation.
