Ingredients
2 tablespoons extra virgin olive oil
2 lbs beef stew meat, cut into bite-sized pieces
6 carrots, chopped
5 celery stalks, chopped
1 large onion, diced
4 cloves garlic, minced
1 cup pearl barley
10 cups beef broth (low-sodium)
1 can (14.5 oz) diced tomatoes
1 tablespoon dried thyme
1 tablespoon Worcestershire sauce (alcohol-free)

Instructions
Set the Instant Pot to the Sauté function and heat the olive oil.
Add the beef stew meat and sear until browned on all sides; remove and set aside.
Add the onion, carrots, and celery to the pot, sautéing for 3-5 minutes until softened.
