Description

Ingredients

12 oz cheese tortellini (oven-baked)
1 cup halved cherry tomatoes
1 cup halved fresh peaches
1 cup frozen corn kernels (thawed)
1 cup halved grape mozzarella balls
5 oz roasted turkey prosciutto (sliced)
1/2 cup crumbled feta cheese
1/4 cup hot honey (see note)
1 tbsp olive oil
1 tbsp balsamic vinegar
Fresh basil leaves (for garnish)


Instructions

Cook tortellini according to package instructions and chill in refrigerator for 15 minutes.
Combine tortellini, tomatoes, peaches, corn, mozzarella, and turkey prosciutto in a large bowl.
Whisk hot honey, olive oil, and balsamic vinegar until smooth.
Pour dressing over pasta salad and toss gently to coat.
Top with feta cheese and fresh basil before serving.

Notes

Make ahead: Store in an airtight container for up to 24 hours. Substitute roasted red peppers for a non-meat option. Hot honey can be purchased pre-made or made by gently heating honey with cayenne pepper (adjust to taste).
