Description

This comforting Homemade Roasted Tomato Basil Soup transforms garden-fresh ingredients into a velvety masterpiece. By slow-roasting ripe Roma tomatoes and garlic, we concentrate their natural sweetness, creating a deep, complex flavor profile. Paired with slowly caramelized yellow onions and finished with a bright, herbal note of fresh basil, this soup is a nourishing, wholesome meal perfect for any chilly afternoon. It is an approachable, healthy dish that stores beautifully for future meals, making it a fantastic addition to your recipe collection.

Ingredients

Scale

3 pounds roma or plum tomatoes, halved
8 cloves garlic, peeled
3 tablespoons high-quality olive oil
1/2 tablespoon olive oil
2 yellow onions, thinly sliced
1/2 cup packed fresh basil leaves
1/2 teaspoon dried oregano
1–2 cups water or vegetarian broth
Salt and freshly ground black pepper to taste

Instructions

Preheat your oven to 400°F (200°C).
Arrange tomato halves and peeled garlic cloves on a large baking sheet.
Drizzle with 3 tablespoons of olive oil and season generously with salt and pepper.
Roast for 35-45 minutes until tomatoes are tender and slightly caramelized.
While tomatoes roast, heat 1/2 tablespoon of olive oil in a large pot over medium heat.
Add sliced onions and cook slowly, stirring occasionally, until soft and golden brown.
Add the roasted tomatoes, garlic, and juices from the pan to the pot with the onions.
Stir in the dried oregano and 1 cup of broth or water.
Simmer for 5-10 minutes to allow flavors to meld.
Remove from heat, stir in fresh basil, and blend until smooth using an immersion blender.
Adjust consistency with remaining broth if needed and season with salt and pepper to taste.

Notes

For a creamier texture, stir in a splash of heavy cream or full-fat coconut milk before serving. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. Serve with a crusty bread or grilled cheese sandwich for a complete meal.
