Ingredients
8 oz spaghetti or penne pasta
2 red bell peppers, thinly sliced
1 yellow bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1 medium onion, finely chopped
3 cloves garlic, minced
2 tbsp olive oil
1/4 cup water or vegetable broth
Fresh basil, chopped (about 1 tbsp)
Salt and black pepper to taste
1/4 tsp red pepper flakes (optional)
Grated Parmesan cheese (optional, for garnish)
Instructions
Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water.
In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté for 2-3 minutes until aromatic.
Add bell pepper slices to the skillet and cook for 5-7 minutes until tender and slightly caramelized.
Toss the cooked pasta into the skillet with peppers. Add 1/4 cup reserved pasta water and stir until the sauce begins to form.
Garnish with fresh basil, red pepper flakes if using, and optional Parmesan cheese. Adjust seasoning as needed.
Notes
Use a mix of bell pepper colors for maximum visual impact and flavor.
Add cherry tomatoes, spinach, or zucchini for a heartier version.
Store leftovers in an airtight container in the refrigerator for 3-4 days.
For a vegan option, omit Parmesan or use a dairy-free alternative.
