Ingredients

4 boneless, skinless chicken breasts
2 lbs baby potatoes, halved
3 cloves garlic, roasted
1 cup heavy cream
1 cup low-sodium chicken broth
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp dried thyme
1 tbsp olive oil
Salt to taste


Instructions

Preheat oven to 375°F (190°C)

Heat olive oil in oven-safe skillet, sear chicken 3-4 minutes per side
Add potatoes and cook 5 minutes, stirring
