1 (14-ounce) can diced tomatoes

Instructions
1. Heat the olive oil in a large pot over medium-high heat. Add the diced onion, carrot, and celery. Sauté them for 4 to 5 minutes until they start to soften and become fragrant.
2. Incorporate the minced garlic along with the dried oregano, dried basil, and salt. Stir continuously and cook for about 1 minute to release their aromas without burning the garlic.
3. Add the chopped cabbage to the pot. Stir frequently and let it sweat for 5 minutes, allowing the cabbage to soften and reduce in volume.
4. Pour in the vegetable broth and the canned diced tomatoes (including their juice). Bring the mixture to a gentle simmer and cook uncovered for 10 minutes, or until all the vegetables have softened to your preferred texture.
5. Remove the pot from the heat. Stir in the lemon juice, fresh parsley, and adjust the seasoning with cracked black pepper. Give everything a good mix and serve hot.
