Description
Fresh spinach and tomato pasta offers vibrant flavors with juicy tomatoes, earthy spinach, garlic, butter, and Parmesan for a quick, satisfying meal.
Ingredients
- 8 ounces pasta, such as linguine or your favorite type
- 1 tablespoon olive oil
- 3 tablespoons butter
- 5–6 cloves garlic, minced
- 12 ounces little tomatoes, such as grape or cherry, halved
- 1/4 teaspoon Italian seasoning
- 2 cups fresh baby spinach, tightly packed
- 1/2 cup freshly grated Parmesan cheese
- Salt and pepper to taste
Instructions
1. Cook pasta in salted water until al dente.
2. While pasta cooks, heat olive oil and butter in a skillet over medium heat.
3. Add garlic, tomatoes, and Italian seasoning. Cook until tomatoes soften.
4. Add spinach and cook until wilted.
5. Reserve 1/4 cup pasta water, then drain pasta.
6. Add pasta to the skillet with reserved pasta water and Parmesan. Toss to coat.
7. Season with salt and pepper and serve immediately.
Notes
Drizzle with olive oil and sprinkle with fresh basil for an aromatic finish.
A squeeze of lemon juice can brighten the flavors beautifully.
