Ingredients
- 2 garlic cloves (minced for best flavor)
- 1/2 tsp sea salt
- 1/2 cup sliced green onions (white and light green parts only)
- 1 cup diced carrots (about 2 medium carrots, peeled and diced evenly)
- 1/4 tsp black pepper (freshly ground for superior flavor)
- 8 oz baby spinach (freshly washed and thoroughly dried)
- 1 cup orzo pasta (I like Barilla brand orzo for its consistent texture and quick cooking time)
- 8 cups vegetable broth (low sodium preferred)
Instructions
1. In a medium pot, heat some olive oil over medium heat.
2. Add the carrots and scallions, and sauté them for about 5-7 minutes until the carrots are slightly tender.
3. Add the garlic and continue to sauté for another minute or two, until the garlic is fragrant.
4. Pour the broth into the pot with the sautéed vegetables.
5. Increase the heat to bring the soup to a boil.
6. Once boiling, reduce the heat to a simmer and let it cook for 10 minutes to allow the flavors to meld together.
7. After simmering, add the orzo pasta to the pot.
8. Cook the pasta for about 5 minutes, stirring occasionally to prevent it from sticking to the bottom of the pot.
9. Season the soup with salt and pepper to taste.
10. Add the spinach leaves and cook for another 2-3 minutes until the spinach has wilted.
11. Stir the soup to ensure even cooking and seasoning throughout.
12. Once everything is well-cooked, ladle the soup into serving bowls.
Notes
This soup is even better the next day after the flavors have developed further. For added protein, consider stirring in cooked white beans or shredded chicken. Store leftovers in the fridge for up to 3 days. Reheat gently and add a splash of water or broth if the orzo has absorbed too much liquid.
