Ingredients

3 cups loosely packed arugula leaves (washed and dried)
2 medium ripe peaches (peeled, pitted, and sliced)
1 English cucumber (sliced or chopped)
1 cup fresh blueberries
2 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar
1 teaspoon honey
Salt and freshly ground black pepper (to taste)
Optional: 2 tablespoons crumbled feta cheese or vegan alternative


Instructions

In a large mixing bowl, combine the washed and dried arugula leaves.
