Description

Indulge in a velvety, comforting mushroom soup without the need for heavy cream. This modern, nutrient-dense recipe uses a secret blend of smooth cottage cheese to achieve a rich, luxurious texture while boosting protein content. Infused with aromatic garlic, earthy mushrooms, and savory bone broth, this soup is a quick, healthy, and satisfying meal perfect for busy weeknights. It is a light yet deeply flavorful dish that leaves you feeling energized and fully nourished.

Ingredients

Scale

1 tablespoon extra virgin olive oil
1 cup yellow onion, chopped
2 garlic cloves, minced
5 cups mixed mushrooms (cremini, shiitake, or button)
3 to 4 cups chicken bone broth
2 cups 4% cottage cheese, blended until smooth
0.5 teaspoon fine sea salt
0.5 teaspoon freshly ground black pepper
1 teaspoon dried thyme

Instructions

Heat the olive oil in a large pot over medium heat.
Add the chopped onion and sauté until translucent and soft.
Add the minced garlic and cook for another minute until fragrant.
Add the mixed mushrooms to the pot and cook until they release their moisture and begin to brown.
Stir in the dried thyme, salt, and black pepper.
Pour in the chicken bone broth and bring the mixture to a gentle simmer for 10-15 minutes.
Use an immersion blender to process the mushroom mixture until relatively smooth.
Stir in the blended cottage cheese until fully incorporated and the soup is velvety.
Simmer on low heat for 5 minutes until heated through without boiling.
Serve warm and adjust seasoning to taste.

Notes

For an even smoother consistency, use a high-speed blender to puree the soup after adding the cottage cheese. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop over low heat to prevent the cottage cheese from separating.
