Ingredients
2 medium sweet potatoes, peeled and cut into 3/4-inch cubes
1 tablespoon olive oil
1/2 teaspoon smoked paprika
Salt and black pepper to taste
1 pound boneless, skinless chicken breast, cut into 1-inch chunks
1 tablespoon olive oil (for the skillet)
1 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
A pinch of cayenne pepper (optional)
1/2 cup tahini
1/4 cup freshly squeezed lemon juice
1 clove garlic, finely minced
4 to 6 tablespoons cold water
1.5 cups white rice, cooked
Instructions
Preheat your oven to 400°F (200°C).
Toss the sweet potato cubes with 1 tablespoon of olive oil, smoked paprika, salt, and pepper on a baking sheet.
Roast the sweet potatoes for 20-25 minutes until tender and caramelized, tossing halfway through.
While the potatoes roast, season the chicken chunks with the paprika, cumin, garlic powder, onion powder, salt, pepper, and cayenne.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat and sear the chicken for 5-7 minutes until fully cooked and golden brown.
In a small bowl, whisk together the tahini, lemon juice, and minced garlic; gradually add cold water one tablespoon at a time until the sauce reaches a creamy, pourable consistency.
Assemble the bowls by layering the cooked rice, roasted sweet potatoes, and seared chicken.
Drizzle generously with the garlic tahini sauce and serve warm.

Store the cooked chicken, sweet potatoes, and rice in separate airtight containers in the refrigerator for up to 3 days to keep them fresh for meal prep.
