A protein-packed, light chicken salad made with Greek yogurt instead of mayonnaise. Packed with fresh herbs, celery, grapes, and zesty lemon-Dijon dressing for a vibrant, healthy twist on a classic.
Ingredients
1.5 lbs cooked chicken, shredded
1 cup plain full-fat Greek yogurt
1/4 cup lemon juice
1 tablespoon Dijon mustard
1 small celery stalk, chopped
1/2 cup seedless grapes, halved
1/4 cup fresh parsley, chopped
Salt and pepper to taste
Optional: 1/4 cup walnuts or pomegranate seeds for texture
Instructions
Cook and shred the chicken; let cool.
In a bowl, mix Greek yogurt, lemon juice, and Dijon mustard until smooth.
Add celery, grapes, parsley, and season with salt and pepper.
Fold in the shredded chicken.
Chill for 15-20 minutes before serving.
Store in an airtight container in the fridge for up to 2 days when fresh.
Notes
Use pre-cooked rotisserie chicken for convenience.
Swap grapes for diced apples or raisins.
