  • 2.2 lbs (1 kg) free-range chicken (whole or assorted cuts)
  • 4 medium potatoes, peeled
  • 2 carrots, peeled
  • 2 leeks, trimmed
  • 1 brown onion, halved
  • 1 celery stalk, trimmed
  • 4 garlic cloves, peeled
  • 1/2 inch (1 cm) piece of ginger, peeled
  • 4 bay leaves
  • Handful of fresh parsley, chopped
  • 1/4 teaspoon turmeric
  • 1 teaspoon black peppercorns
  • 1 1/2 teaspoons sea salt (adjust to taste)
  • 1 cup fideo noodles or angel hair pasta

Instructions

1. Peel the potatoes, carrots, onion, ginger, and garlic. Trim the ends of the leeks and remove any celery leaves. Cut the carrots, leeks, and onion in half to fit better in the pot.

2. Place the chicken, prepared vegetables, bay leaves, turmeric, black peppercorns, and salt in a large pot. Fill with water until the ingredients are fully covered. Cover the pot with a lid and bring to a boil over high heat. Once boiling, reduce to low heat and let it simmer for at least 2 hours.

3. Taste the broth halfway through and adjust seasoning as needed.

4. After simmering, carefully remove the chicken, potatoes, carrots, and leeks. Discard the bay leaves. Remove onion if preferred.

5. Separate the chicken from its bones and skin, then shred the meat. Strain the broth through a fine mesh strainer.

6. Cut the boiled vegetables into smaller pieces and return them to the pot along with the shredded chicken.

7. Bring the broth back to a boil and add the fideo noodles or angel hair pasta. Cook according to package instructions.

8. Ladle the soup into bowls and top with freshly chopped parsley before serving.

Notes

For deeper flavor, simmer the broth for up to 4 hours.

Use leftover roasted chicken for a faster version.

This soup freezes well—store without noodles and add them fresh when reheating.

Fideo noodles can be replaced with rice or other small pasta shapes.
