Ingredients
6–8 slices turkey bacon, cut into thin strips
4 medium carrots, peeled and shredded
1 yellow onion, finely diced
3 tablespoons all-purpose flour
30 ounces frozen shredded hash browns, thawed
6 cups unsalted chicken broth
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes
1 teaspoon dried fines herbes
1 cup heavy cream
1 cup whole milk
1 cup shredded sharp cheddar cheese
1/2 cup shredded Gruyere cheese
Instructions
In a large pot or Dutch oven, cook the turkey bacon until crispy, then remove and set aside, leaving the rendered fat in the pot.
Add the diced onions and shredded carrots to the pot and sauté over medium heat until softened, about 5-7 minutes.
Stir in the flour and cook for 1-2 minutes to create a light roux.
Gradually whisk in the chicken broth, ensuring there are no lumps.
Add the thawed hash browns, salt, pepper, red pepper flakes, and dried fines herbes.
Bring the mixture to a simmer and cook for 15-20 minutes until the potatoes are tender and the soup has thickened.
Reduce heat to low and stir in the heavy cream and whole milk.
Fold in the shredded cheddar and Gruyere cheese until melted and smooth.
Serve warm, topped with the reserved crispy turkey bacon.
Notes
Ensure the hash browns are fully thawed before adding them to the pot to ensure even cooking. You can stir in chopped fresh kale or spinach at the end for added nutrition. Store leftovers in an airtight container in the refrigerator for up to 3 days.
