Ingredients

  • 1 lb. ground beef (85/15)
  • 1 cup celery, diced
  • 1 cup carrots, diced
  • 1 medium onion, diced
  • 2 medium potatoes, diced (Yukon gold)
  • 5 cups beef broth
  • 1 (15 oz) can corn, drained
  • 1 (8 oz) can tomato sauce
  • 1 (28 oz) can diced tomatoes
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 bay leaf

Instructions

1. In a large dutch oven (6-quart), over medium heat, brown the ground beef until fully cooked. Spoon off the excess fat.

2. Add the remaining ingredients and stir to combine.

3. Bring the soup to a boil, then reduce heat to a simmer.

4. Cover the pot with the lid tilted and let simmer for 1 to 1½ hours, or until the vegetables are tender.

5. Remove the bay leaf before serving.

6. Ladle into bowls and enjoy hot.

Notes

You can modify this recipe to use other meats such as ground turkey or chicken.

To make it meatless, substitute the ground beef with beans, rice, or pasta.

This soup stores well in the fridge for up to 4 days and can be frozen for up to 3 months.

Serve with warm bread or crackers for a complete meal.
