This Ground Turkey Sweet Potato Casserole blends savory turkey with roasted sweet potatoes for a wholesome, cozy one-dish meal that’s perfect for weeknights or meal prep.
Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup spinach, chopped
- 1 can (14.5 oz) diced tomatoes, drained
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
Instructions
1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or cooking spray.
2. In a large skillet, heat olive oil over medium heat. Add diced sweet potatoes and cook for 5–7 minutes, stirring occasionally, until slightly softened. Remove and set aside.
3. In the same skillet, add ground turkey and cook for about 5 minutes, breaking it up with a spoon, until browned and cooked through.
4. Add chopped onion, bell pepper, and garlic to the turkey. Cook for another 3–4 minutes until vegetables are softened and fragrant.
5. Stir in diced tomatoes, paprika, cumin, oregano, salt, and pepper. Simmer for a couple of minutes to combine flavors. Add chopped spinach and stir until wilted.
6. In the prepared baking dish, layer half of the cooked sweet potatoes on the bottom. Spread the turkey mixture evenly over the top. Layer the remaining sweet potatoes over the turkey.
7. Cover the dish with foil and bake for 20 minutes.
8. Remove foil, sprinkle shredded mozzarella evenly over the top, and return to oven. Bake uncovered for 10 minutes, until cheese is melted and bubbly.
9. Let cool slightly before serving. Enjoy warm!

To save time, microwave the sweet potatoes for a few minutes before pan-cooking.
For a dairy-free option, omit the cheese or use a dairy-free alternative.
