Description
This cheesy, sweet potato ground turkey bake is super easy to make. It’s the ultimate, healthy-ish comfort food and something the whole family will love.
Ingredients
- 2 medium sweet potatoes, peeled and cubed (about 3–4 cups)
- 1 tablespoon extra virgin olive oil
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- ¼ teaspoon garlic powder
- 2 teaspoons dried/crushed rosemary
- 1 lb. lean ground turkey
- 1 medium yellow onion, diced (white onion also works)
- 1 (14.5 oz) can vegetable broth (about 2 cups)
- 1 ¾ cups whole milk (or half & half)
- 1 cup basmati rice (or long grain white)
- 2 cups shredded cheddar cheese
- 2 teaspoons chopped parsley or dried parsley flakes
Instructions
1. Preheat oven to 400°F. Peel and dice sweet potatoes into 1-inch cubes.
2. Place sweet potato chunks in a 9 x 13″ casserole dish. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and rosemary. Stir well to coat.
3. Bake sweet potatoes for 30 minutes.
4. Meanwhile, in a large skillet over medium-high heat, add ground turkey. Break apart with a spoon and cook until completely browned.
5. Add diced onion to the browned turkey and sauté for 3–5 minutes, until soft and translucent.
6. Remove casserole dish from oven after 30 minutes. Add vegetable broth, milk, uncooked rice, and turkey-onion mixture to the dish. Stir well.
7. Bake uncovered for 15 minutes.
8. After 15 minutes, sprinkle shredded cheese evenly over the top and return casserole to the oven.
9. Bake for an additional 10 minutes, until cheese is melted and bubbly.
10. Remove from oven and let rest for 10–15 minutes before serving.
11. Sprinkle with chopped parsley, plate, and enjoy!
Notes
You can use any type of sweet potato — orange, white, or even purple.
Ground beef or chicken can be substituted for turkey. Drain excess fat if using higher-fat ground meat.
Chicken broth may be used in place of vegetable broth.
Half & half can replace whole milk for extra richness.
Letting the casserole rest helps it firm up and enhances the flavor.
