Ingredients
4 ripe peaches
4 cups arugula or baby spinach
1 cup cherry tomatoes, halved
1 avocado, sliced
1/2 cup roasted pistachios
1/2 cup crumbled goat cheese
1/4 cup red onion, thinly sliced
2 tbsp balsamic vinegar
1 tbsp honey
1 tbsp olive oil
Fresh basil leaves for garnish
3 cloves garlic, minced
Instructions
Preheat grill to medium-high heat
Cut peaches in half; remove pits
Brush with olive oil
Grill cut-side down for 3-4 minutes until charred and softened
Let cool slightly, then slice into wedges
In a bowl, whisk balsamic vinegar, honey, olive oil, and garlic for vinaigrette
Toss greens with onion and vinaigrette
Top with peach wedges, cherry tomatoes, avocado, pistachios, and goat cheese
Add fresh basil leaves before serving
