Ingredients
4 ears of corn, shucked
2 ripe avocados, diced
1 cup crumbled goat cheese
1/4 cup chopped red onion, finely sliced
1/2 cup hot honey (adjust to taste)
2 tablespoons apple cider vinegar
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
Fresh cilantro or parsley (optional, for garnish)
Salt and pepper, to taste
Instructions
Preheat grill to medium-high heat.
Grill corn for 10-12 minutes, rotating until charred on all sides. Cool, then cut kernels from the cob.
In a large bowl, combine grilled corn, diced avocado, crumbled goat cheese, and red onion.
Whisk hot honey, apple cider vinegar, olive oil, and lemon juice in a small bowl to make the vinaigrette.
