Ingredients
1½ lbs boneless, skinless chicken breasts, cubed
4 cloves garlic, minced
6 tbsp unsalted butter, melted
¾ cup grated Parmesan cheese
Zest and juice of 1 lemon
Salt and black pepper, to taste
8 (12-inch) wooden or metal skewers
Instructions
Preheat oven to 400°F (200°C)
In a bowl, combine melted butter, garlic, Parmesan, lemon zest, and lemon juice
Season chicken cubes with salt and pepper
Pour the chicken into the sauce and toss to coat evenly
Skewer the chicken pieces, reserving the sauce
Place skewers on a baking sheet (butterfly skewers to prevent rotation issues)
Pour reserved sauce over skewers and bake for 15-20 minutes, flipping halfway
