Description
A vibrant, zesty tomato garlic salad made with ripe tomatoes, aromatic garlic, fresh herbs, and a bright olive oil and vinegar dressing. Simple, fresh, and incredibly satisfying — perfect as a side or light meal.
Ingredients
2 pints (about 500g) fresh tomatoes (such as cherry, grape, or heirloom)
3 cloves garlic, minced
¼ cup extra virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh basil
1 teaspoon honey or maple syrup (optional)
Salt, to taste
Ground black pepper, to taste
Instructions
Wash and dry the tomatoes.
Cut them into halves or quarters, depending on size, and place in a large bowl.
In a small bowl, whisk together garlic, olive oil, vinegar, parsley, basil, and honey (if using).
Pour the dressing over the tomatoes and gently toss to coat.
Season with salt and pepper.
Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.
Refrigerate leftovers for up to 2 days.

Use the ripest, most flavorful tomatoes you can find for the best results.
For extra brightness, add a squeeze of fresh lemon juice.
