  • 1 lb ground beef (80/20 lean/fat)
  • 2 large yellow onions, thinly sliced (about 3 cups)
  • 1 cup white long-grain rice (uncooked)
  • 1 can (10.5 oz) Campbell’s cream of mushroom soup
  • 1 cup beef broth
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoon butter
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

Instructions

1. Preheat the oven to 375°F (190°C).

2. In a large skillet over medium heat, cook the ground beef for 5–7 minutes until no longer pink, breaking it up as it browns. Drain most of the fat, leaving about a tablespoon.

3. Lower the heat to medium-low, add the butter and sliced onions. Cook for 10–15 minutes, stirring occasionally, until onions are caramelized and golden-brown.

4. Add uncooked rice, cream of mushroom soup, beef broth, salt, pepper, and garlic powder to the skillet. Stir until everything is well combined.

5. Pour the mixture into a greased 9×13-inch baking dish and cover tightly with foil.

6. Bake for 25 minutes, then check that the rice has absorbed most of the liquid.

7. Remove foil, sprinkle shredded cheddar cheese evenly on top, and bake uncovered for another 10 minutes until cheese is melted and bubbly.

8. Optional: Broil for 1–2 minutes to brown the cheese slightly, watching carefully to avoid burning.

9. Let the casserole rest for 5 minutes before serving to allow it to set.

Notes

Use block cheddar cheese for best melt and flavor—pre-shredded works but may be drier.

Don’t rush the onion caramelization step; it builds the dish’s signature flavor.

Leftovers reheat beautifully and taste even better the next day.

You can prep this dish ahead and bake it when ready—just add 5–10 minutes to the baking time if chilled.
