Ingredients

1/2 cup cooked brown rice
1/2 cup fresh spinach, sliced
1/3 cup firm tomatoes, chopped
1/3 cup English cucumber, chopped
4 Mediterranean-style olives, pitted and sliced
1 deli-style pickle, sliced
6 prepared chickpea falafel balls
2 tablespoons tahini sauce
1 tablespoon lemon juice
1 pinch sea salt and black pepper


Instructions

Place the cooked brown rice in the base of a serving bowl.
Arrange the sliced spinach, chopped tomatoes, and cucumbers on top of the rice.
Add the sliced olives and pickled cucumber slices to the edges.
Warm the prepared falafel balls and place them in the center of the bowl.
Drizzle the tahini sauce and fresh lemon juice over the entire assembly.
Season with a pinch of sea salt and black pepper, then serve immediately.

Notes

You can substitute the brown rice with quinoa or farro for a different texture. This dish is excellent for meal prepping; prepare the grains and chop the vegetables ahead of time for an easy assembly-line dinner. For extra crunch, add toasted pita bread chips on top.
