Ingredients

  • 1 tablespoon olive oil
  • 1/2 medium onion, chopped
  • 1 pound ground turkey
  • 2 heaping tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14 ounce) can red kidney beans, drained
  • 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies with juices
  • 1/2 cup water or chicken broth
  • Salt & pepper to taste
  • Suggested Toppings (optional, to taste):
  • Shredded cheddar
  • Cilantro
  • Sour cream
  • Corn chips or strips
  • Scallions or red onions
  • Avocado

Instructions

1. Add the olive oil to a Dutch oven or soup pot over medium-high heat. Sauté the onion for about 5 minutes.

2. Add the ground turkey to the pot and cook for 5 minutes, breaking it up as you go along.

3. Stir in the tomato paste, Worcestershire sauce, chili powder, garlic powder, cumin, smoked paprika, and cayenne pepper.

4. Add in the beans, Rotel, and water (or chicken broth). Increase heat to high and bring to a gentle boil, then reduce heat and simmer for 15–20 minutes with the lid slightly open, stirring occasionally.

5. Prep the toppings while the chili is cooking.

6. Season with salt and pepper as needed, then serve with toppings and enjoy.

Notes

Skip or reduce the cayenne pepper if you prefer a milder chili.

Rotel tomatoes already add some spice, so adjust to taste if using additional heat.

Most chili powders are mild, but double-check your brand to avoid overpowering spice levels.

This chili pairs wonderfully with cornbread or tortilla chips.
