Description
Juicy seasoned beef pressed into tortillas with melted cheese, grilled to crispy perfection in one skillet.
Ingredients
- 1 lb ground beef (80/20 recommended for best flavor)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 4 large flour tortillas (burrito-size)
- 1 cup shredded cheddar cheese or American cheese (about 1/4 cup per quesadilla)
- Optional toppings: pickles, diced onions, burger sauce, ketchup, mustard
Instructions
1. Heat your skillet or griddle over medium-high heat for 2–3 minutes until hot. Reduce to medium if needed.
2. Working with one quesadilla at a time, take about 4 oz of ground beef and press it onto one half of a tortilla, spreading thin and leaving a half-inch border. Season with a quarter of the salt, pepper, and garlic powder.
3. Place the tortilla beef-side down in the skillet. Press down firmly with a spatula for 10–15 seconds. Let cook undisturbed for 2–3 minutes until edges are brown and crispy.
4. Flip the tortilla so beef side is up. Sprinkle about 1/4 cup cheese over the beef and fold tortilla in half to form a half-moon. Press down gently with a spatula.
5. Cook for 1–2 minutes on each side until both sides are golden and cheese is fully melted.
6. Remove from heat and let rest for 30 seconds before slicing. Repeat with remaining tortillas and beef.
Notes
For best results, don’t move the beef while it cooks to develop a crispy crust. Use medium-high heat for proper searing. Cook one quesadilla at a time for even results. Store leftovers in an airtight container for up to 3 days and reheat in a skillet to maintain crispiness.
