Description

A vibrant, balanced salad combining creamy brie, crisp apples, and a zesty shallot vinaigrette. Perfect for a light yet satisfying meal with layers of sweet, savory, and tangy flavors. Topped with cracked almonds and cranberries for texture.

Ingredients

Scale

4 cups fresh mixed greens
8 oz brie cheese, sliced
2 medium apples, thinly sliced
1/4 cup sliced almonds
1/4 cup dried cranberries
1 shallot, finely chopped
1/4 cup apple cider vinegar
2 tbsp olive oil
1 tbsp honey
1 tsp Dijon mustard
Salt and pepper to taste

Instructions

Wash greens and pat dry; transfer to a large salad bowl.
Top with apple slices, brie cheese, almonds, and cranberries.
In a small bowl, whisk shallot, apple cider vinegar, olive oil, honey, Dijon mustard, salt, and pepper to create the vinaigrette.
Toss salad gently with the dressing, or serve dressing on the side.
Serve immediately for best texture.

Notes

Substitute brie with goat cheese if preferred.
For a firmer apple, use Granny Smith or Honeycrisp.
Store dressing separately for up to 3 days; salad is best enjoyed fresh.
Add pears or grapes as alternatives to apples.
