Description
A moist and fragrant cake infused with fresh orange juice, honey, and warm ginger spice. Perfect for holidays, tea time, or whenever you want a bright citrus dessert.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Pinch of salt
- 1/2 cup unsalted butter, melted
- 3/4 cup raw honey
- 2 large eggs
- 1 cup fresh orange juice
- Zest of 2 oranges
- 1 tablespoon grated fresh ginger
- 2 tablespoons honey (optional glaze)
- 2 tablespoons orange juice (optional glaze)
Instructions
1. Preheat the oven to 350°F (175°C) and grease a baking pan
2. In a bowl whisk together flour, baking soda, ground ginger, cinnamon, nutmeg, and salt
3. In a separate bowl combine melted butter, honey, and eggs and whisk until smooth
4. Stir in the orange juice, orange zest, and grated fresh ginger
5. Gradually fold the dry ingredients into the wet ingredients until just combined, avoiding overmixing
6. Pour the batter into the prepared baking pan and spread evenly
7. Bake for 40–45 minutes until a toothpick inserted in the center comes out clean
8. Mix the optional honey and orange juice glaze and brush over the cake while it is still warm
9. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely
Notes
For stronger citrus flavor add extra orange zest or a few drops of orange extract
This cake pairs well with whipped cream, vanilla ice cream, or a light citrus glaze
Store leftovers in an airtight container at room temperature for up to 3 days
The cake can also be frozen for up to 3 months if wrapped tightly
