Description

This comforting slow-cooked chicken noodle soup is a classic, nourishing meal perfect for busy days. By gently simmering boneless chicken breasts with fresh carrots, aromatic onions, celery, and herbs, you achieve a deeply flavorful broth and tender meat without the need to stand over a stove. It is a wholesome, family-friendly dish that captures the nostalgic flavors of home cooking with minimal effort. Simply set your crockpot in the morning and return to a warm, restaurant-quality meal that feeds the soul.

Ingredients

Scale

2 large boneless skinless chicken breasts
2 large carrots, peeled and sliced into rounds
1 medium yellow onion, diced
2 celery ribs, sliced into thin half-moons
4 garlic cloves, minced
2 large bay leaves
1 stalk fresh rosemary
1/2 teaspoon dried thyme
64 ounces low-sodium chicken broth
8 ounces wide egg noodles
Salt and black pepper to taste
Fresh parsley for garnish

Instructions

Place the chicken breasts, carrots, onion, celery, and garlic into the slow cooker.
Add the bay leaves, fresh rosemary stalk, and dried thyme.
Pour the chicken broth over the ingredients until covered.
Cover and cook on high for 4 hours or on low for 6-8 hours until the chicken is tender.
Remove the chicken breasts, shred with two forks, and return to the pot.
Remove and discard the bay leaves and rosemary stalk.
Add the egg noodles to the crockpot and cook on high for an additional 15-20 minutes until tender.
Season with salt and pepper to taste and garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To freeze, cook the noodles separately and add them when reheating to prevent them from becoming mushy. You can also add peas or spinach during the last 10 minutes for extra greens.
