Ingredients
1 1/2 cups cooked white or brown rice
1 1/2 cups cooked chicken breast, shredded
1 cup canned black beans, rinsed and drained
1 cup cooked pinto beans, optional
1/2 cup diced red onion
1/2 cup chopped fresh tomatoes
1/4 cup chopped cilantro
1 ripe avocado, sliced
Juice of 1 lime
1/2 cup plain Greek yogurt
1 tablespoon lime juice
1 teaspoon ground cumin
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Optional toppings: shredded cheese, cherry tomatoes, hot sauce
Instructions
Cook rice according to package instructions
Sauté chicken with cumin, chili powder, salt, and pepper until cooked through
Prepare yogurt-lime dressing by mixing Greek yogurt, lime juice, cumin, chili powder, salt, and pepper
Layer rice in a bowl as base
Add shredded chicken on top
Spread black beans/pinto beans over rice
Sprinkle red onion, tomatoes, and cilantro
Drizzle with yogurt-lime dressing
Top with avocado slices and additional lime wedges
Notes
Use pre-cooked rotisserie chicken for speed
Swaps: Replace rice with cauliflower rice for low-carb version
Double the dressing recipe for a more tangy flavor
