Description
Hamburger Soup is a fast and hearty soup loaded with lean ground beef, vegetables, potatoes, and rich tomato flavor. It’s easy to make, freezer-friendly, and perfect for busy weeknights.
Ingredients
- 1 pound lean ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 3 ½ cups beef broth
- 28 ounces canned diced tomatoes with juices (1 can)
- 10.75 ounces condensed tomato soup (1 can)
- 2 teaspoons Worcestershire sauce
- 1 teaspoon Italian seasoning
- 1 bay leaf
- Salt and black pepper, to taste
- 3 cups frozen mixed vegetables or fresh chopped vegetables
Instructions
1. Brown the onion, ground beef, and garlic in a large pot until no pink remains. Drain any excess fat.
2. Add potatoes, beef broth, diced tomatoes, tomato soup, Worcestershire sauce, Italian seasoning, and bay leaf.
3. Cover and simmer for 10 minutes.
4. Stir in the vegetables and continue to simmer for 15-20 minutes or until the potatoes are tender.
5. Remove bay leaf, season with salt and pepper to taste, and serve hot.
Notes
This soup can be made ahead and stored in the refrigerator for up to 4 days.
It freezes well—cool completely before freezing in airtight containers.
Feel free to use fresh or frozen vegetables depending on what you have on hand.
