Ingredients
8 oz (225g) whole wheat pasta
1 cup cherry tomatoes, halved
1 large cucumber, chopped
1 small red onion, thinly sliced
1/4 cup pitted black olives
1 cup crumbled feta cheese
1/4 cup olive oil
2 tbsp white wine vinegar
1 tbsp lemon juice
1 tsp dried oregano
1 clove garlic, minced
Salt to taste
Fresh parsley or basil for garnish (optional)
Instructions
Cook pasta according to package instructions until al dente
Rinse pasta under cold water to cool; drain and let air-dry
Chop tomatoes and cucumber; slice red onion and olives
In a bowl, combine cooled pasta, tomatoes, cucumber, onion, olives, and feta
In a separate bowl, whisk together olive oil, vinegar, lemon juice, oregano, garlic, and salt
Add dressing to salad and toss gently
Chill in refrigerator for 30 minutes before serving
Garnish with fresh parsley or basil if using
