Ingredients
1 tablespoon olive oil
1 medium onion, diced
2 medium carrots, diced
2 stalks celery, diced
6 cups chicken broth (ensure gluten-free)
2 cups cooked rotisserie chicken, shredded
1 cup gluten-free orzo pasta
2 large eggs
1/4 cup fresh lemon juice
2 cups fresh baby spinach
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Heat olive oil in a large pot over medium heat.
Add the onion, carrots, and celery, sautéing until softened, about 5-7 minutes.
Pour in the chicken broth and bring to a gentle boil.
Add the gluten-free orzo and cook according to package directions until al dente.
Stir in the shredded chicken and spinach until the spinach wilts.
In a small bowl, whisk the eggs and lemon juice together until smooth.
Slowly ladle about half a cup of the hot broth into the egg mixture while whisking constantly to temper the eggs.
Pour the tempered egg mixture back into the soup pot, stirring constantly to thicken the broth.
Season with salt and pepper, garnish with parsley, and serve immediately.
Notes
Be careful not to boil the soup after adding the egg mixture to prevent curdling. Store leftovers in an airtight container in the refrigerator for up to 3 days. The orzo may absorb broth while sitting, so add a splash of extra chicken broth when reheating.
