Description

Experience the ultimate comfort food with this Easy Gluten-Free Lasagna Soup. It is a hearty, vibrant, and soul-warming Italian-inspired dish that captures all the savory goodness of traditional lasagna without the time-consuming layering and baking. Featuring succulent ground beef, flavorful beef-based Italian sausage, aromatic herbs, and gluten-free pasta, this one-pot wonder is ready in under 30 minutes, making it the perfect solution for busy weeknights when you need a wholesome, satisfying meal for the family.

Ingredients

Scale

1 tbsp olive oil
1 lb ground beef
1 lb ground beef Italian-style sausage (pork-free)
1 yellow onion, diced
3 cloves garlic, minced
4 cups beef broth
1 can (28 oz) crushed tomatoes
1 cup marinara sauce
8 oz gluten-free lasagna noodles, broken into pieces
1 tsp dried oregano
1 tsp dried basil
Salt and black pepper to taste
1 cup ricotta cheese
Fresh parsley for garnish
1/2 cup grated parmesan cheese

Instructions

Heat olive oil in a large pot or Dutch oven over medium heat.
Add the ground beef and Italian-style sausage, cooking until browned; drain excess fat.
Add diced onion and cook until translucent, about 5 minutes.
Stir in the minced garlic, dried oregano, and dried basil, cooking for 1 minute until fragrant.
Pour in the beef broth, crushed tomatoes, and marinara sauce, bringing the mixture to a simmer.
Add the broken gluten-free lasagna noodles and cook for 10-12 minutes or until the pasta is tender.
Season with salt and pepper to taste.
Ladle soup into bowls and top each serving with a generous dollop of ricotta and a sprinkle of parmesan and fresh parsley.

Notes

Ensure your sausage is labeled as beef-based or turkey-based to avoid pork products. Store leftovers in an airtight container in the refrigerator for up to 3 days; add a splash of broth when reheating as the pasta will absorb liquid over time.
