Ingredients
2 large cucumbers, sliced into ¼-inch rounds
2 cups cherry tomatoes, halved (about 300g) or 3 medium tomatoes, chopped into bite-sized chunks
¼ red onion, thinly sliced
¼ cup olive oil
2 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
Salt, to taste
Freshly ground black pepper, to taste
Fresh basil or parsley, chopped (optional)
Instructions
In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, and honey or maple syrup until emulsified. Season with salt and pepper to taste.
In a large bowl, combine sliced cucumbers, cherry tomatoes, and thinly sliced red onion.
Pour the vinaigrette over the salad and gently toss until all ingredients are evenly coated.
Let the salad sit for 10 minutes to allow the flavors to meld.
Toss with fresh herbs, if using, and serve immediately or chilled.
Notes
For milder red onion flavor, soak the slices in cold water for 5-10 minutes before adding to the salad.
